I wonder if it is possible to hide the name and version of the webserver so that people could not know what type of web server is running.

Is this possible?

Sure, use

ServerString = none

For the record, php.ini contains expose_php = On by default, which adds the PHP version to the web server header. Setting it to Off prevents that.

in compare to other webservers and PHP Hiawatha never had know exploits in any version.
Maybe reading "Hiawatha" prevent Script Kiddies to spend time in it
